JNcQUOI Fish

Lisbon, Portugal

2025

At the street level of the JNcQUOI House project sits the JNcQUOI Fish, the main restaurant of the project, covering the full extension of the building street level floor plan.

Internalized in experience, developed as a set of internal levels that articulate the space and provide hierarchy to the room, the floor plan allows for different dining experiences, from the most traditional and static to the most dynamic with direct views to the kitchen action.

With perimetral seating, at the center stage the kitchen takes place. Developed with the concept of radical transparency, the kitchen is designed as a full action-see through where guests can closely follow the action, from the selection of the fish at the market, to the cooking in the custom-made oven. This transparency and kitchen focus concept is accentuated by the use of decorative mirrors in the perimetral walls and shift on material elements on the kitchen.

Inspired in the kitchens of the Palacio Nacional de Sintra, from where material cues such as the diagonal glazed tiled walls and the use of Lioz stone derives, the space is accentuated by a richness of materials and texture that tastefully overlay with the kitchen action. Belgian linens, leather benches, white wood chairs and Carrara tabletops intertwine its materials intricacies with the architecture hand painted deep green gloss ceilings and black tiled floors.

All elements carefully balanced and in direct dialogue between them create a unique elegant atmosphere with a sense of taste and elegance, aligned with the historic walls that house the restaurant.
